It’s hot outside and my kids want cookies; I absolutely do not want to heat up the house with baking cookies. But I do have to agree with them that some yummy cookies sound pretty good right now so I started digging through my recipe box for my momma’s absolutely delicious no-bake cookie recipe.

Her recipe is a bit different than some that I’ve seen because she always adds coconut in hers. I have to admit that I’m not a real big fan of coconut but I promise you for sure that when she whipped up a batch of these cookies, my step-dad and I fought over every single last bite! If you absolutely will not eat the coconut then you can simply leave the recipe as is and just leave it out without making any adjustments. Okay so without any further chatter here’s:
Grandma Mary’s No-Bake Cookies
1/2 cup butter
1/2 cup milk
2 cups sugar
6 tablespoons unsweetened cocoa
3 cups quick-cooking oats
1/2 cup coconut
Heat butter, milk, and sugar in a sauce pan over medium heat and bring to a rolling boil; stir occasionally. Let the mixture boil for 1 minute and continue to stir occasionally. Remove it from the heat and add cocoa, oats, and coconut. Drop tablespoonfuls of mixture onto waxed paper and let cool until “set”.
This should make about 3 dozen cookies but when you have your children helping you it’s hard to determine just how many you’ll end up with in the end.
